It is one of the many variants of the classic Italian risotto, prepared slowly from rice, but which is made with that type of rice that releases some of its starch into the cooking liquid, creating its own sauce.

You need to use the right rice, the one with short, round grains (Arborio type) because it contains a higher amount of starch.

In general, risotto requires a very special ingredient: patience. You will need to mix this rice for a long time, mixing is the key, so be prepared to sit and take care of it, you can't do much else at the same time.

Below is a recipe for risotto with pumpkin from Gordon Ramsay, similar to the one made in the video, at the restaurant:

Ingredient:

  • 50 g diced bacon or bacon
  • 650 ml chicken soup
  • 2 shallot-shaped onions cut into cubes

Pour the wine and cook the composition on the fire until the liquid is absorbed.

Add half a cup of the pumpkin puree and stir constantly until absorbed, then add the rest while continuing to chew from time to time.

Now continue similarly with the chicken soup, pour a quarter of the amount and mix well. When the liquid has been absorbed, add it to the soup again and stir. Continue cooking on the fire, gradually adding all the chicken soup and stirring, until the rice grains are tender and the risotto is creamy. The whole process should take about 15 minutes.
